This is fairly similar to the other rump steak, and starts out the much the same.
I bought just under 1kg of rump steak at $10-99/kg on special.
Cut fat off, then cut steaks into a dozen pieces.
Put the fat offcuts into the frypan on a hot heat for a couple of minutes - just long enough to coat the bottom of the pan with fresh meat fat.
Fast fry the outside of the steak to sear for about 5 minutes each side. This gives a nice fried flavour which is retained by the cooking. Then braise steak in water, stock and flavourings for 45 minutes, adding sliced mushrooms after half an hour, along with a couple of slices of ham and a tablespoon of the pizza sauce you have left from pizzas. This gives a completely different flavour which goes well with the accompaniments. Thicken with cornflour at the end.
Boil 4 or 5 carrots, then simmer for 20-25 minutes, adding broccoli after 15 minutes. This keeps the broccoli firm and a little crunchy.
Put 2 cups of flour, or 1 flour and 1 cornmeal into a mixing bowl. Add a pinch of salt, break in two eggs and mix with sufficient milk to make batter. Yes, that is a Yorkshire Pudding recipe, but if you use corn meal, it changes the taste and texture and it goes extremely well with the rump steak.
Mix thoroughly before preparing other ingredients as it benefits from standing in the fridge for an hour prior to cooking. Put a tablespoonful into each patty tin in a tray, and put the rest into a small baking dish. Make sure the dishes have a few drops of oil added to the bottom of each patty tin and baking dish.
Put into oven for about 20 minutes at 180 fan-forced or 200 plain. They are cooked when risen and golden brown. The kids came back for more extras than we had - very popular!
There is 1/3 of the meat left which will be half a meal in the next day or two.
